We brew a bit here at Curbstone Valley...although we didn't get to the last batch of porter as we were too busy, and it never made it to the bottle. It...sadly...was flushed (I heard that gasp). Yep, all 5 gallons. We've resolved not to let that happen in 2011. Anyhoo, around here Charlie Papazian's books seem to be gospel, and we've made some good brews from his recipes, along with concocting a few of our own. I thou...My first encounter with Palmer was similar. I thought he was like a Scientologist, getting me to do maths. It slowly becomes easier, especially as each step does improve the ale. I would recommend using the method he describes in Chapter 1 rather than what it says on the kit's instructions. <br /><br />Also, buy yourself some Northdown (or similar) and Fuggles (or similar - see chapter 5) Hops. Want it hoppy? Boil around two ounces of the Northdown in a gallon or so of water for about 40 minutes, then add around an ounce and a half of the Fuggles and boil for another 20 minutes. (Work out the right amounts by trial and error, but that will really add hoppiness).
